In 2006 be bought this totally devastated place where no one had lived for the past fifty years. Then we learned that about one-hundred years ago this was where the famous sweet Šibenik Maraština was stored after having been dried in the Square 4 Bunara, and before being sent off to courts throughout Europe.

Renovation took an entire year.

With spirit and devotion we created our first menu that started off an exciting summer full of events, some pleasant, others not so pleasant.

We were aware that every beginning was hard, but our passion for gastronomy and our determination helped us move on.

 

The Pelegrini Philosophy

 

The development of cuisine is never ending, and each day we endeavour to improve yesterday’s efforts.

 

We are building the philosophy of our cuisine on a combination of tradition and innovation. This villa and its history, tradition and antique patina, together with our desire, energy and freshness constitutes our Pelegrini Tavern & Wine Cellar.

Our objective is to surprise and offer you a novel experience unique only to the Pelegrini Tavern.

 

Why the name Pelegrini?

 

Because the villa where part of our tavern is located is called Pelegrini-Tambača; and because the first ever hotel in Šibenik was named Pelegrini. And last but not least, because pelegrin comes from the word pilgrim and the nearby St. James Cathedral is a pilgrims’ destination.

 

Why do we do what we do?

 

Primarily out of love toward gastronomy and enology, and the desire to use the wide variety of foods that our region offers us.

Our dream is to prepare local foods in a somewhat different fashion, and thus offer you a genuine gastronomic adventure.

The first ingredient in our kitchen has always been and always will be flavour... we like to experiment, but not at our guests’ expense.
